"Animation from Script to Screen" by Shamus Culhane and "The Animation Book" by Kit Laybourne should be your two starting points. The Preston Blair books are good as well but they aren't as nutty-bolty.
Richard William's "Animator's Survival Kit" and Eric Goldberg's "Character Animation Crash Course" are essential if you're interested in character animation.
